Salmon Burgers with Avocado Salsa
This recipe idea caught my eye as salmon burgers or patties are a favorite here. I have used a variety of recipes to make these, most are held together with assorted combinations of vegetables, eggs, and Whole30 mayonnaise. This particular recipe idea called for bread crumbs which I usually avoid, but I thought this might be worth a try using gluten free breadcrumbs. And the avocado salsa topping? Well, that is just the icing on any cake, right? 🤗
INGREDIENTS -
1 1/2 pound package of salmon
1 cup gluten free breadcrumbs, homemade or store bought
1/4 cup cilantro
2 eggs, lightly whisked
1/4 cup Whole30 mayonnaise
1 Tbsp lemon juice (about 1/2 lemon)
1 tsp mustard
1/2 tsp salt
1/2 tsp pepper
1 tsp avocado oil, for greasing the pan
AVOCADO SALSA -
1 1/2 large avocados, diced
1/4 cup red onion, chopped small
1/2 cup cilantro, chopped
1 lime, juiced, about 2 tablespoons
1 Tbsp olive oil
Salt and pepper to taste
I must admit there was a bit of prep time involved in this recipe. I used a package of home caught and packaged frozen salmon fillets, which aren’t the perfect fillets so there were bones to be removed, along with removing the skin, so dicing the salmon into pieces took a while. If you use a store bought salmon that has been professionally filleted that process would probably go a little quicker. And then the avocado, onion, cilantro, etc… 😳 But I did start early in the day so this was all prepped and ready to go at mealtime. I just wanted to give you a heads up that this isn’t a recipe you want to start 30 minutes before dinner!
Dice the salmon fillet into small pieces, about 1/4 inch, and place in a medium size mixing bowl. Add the remainder of the salmon burger ingredients and gently stir together. Divide the salmon mixture into equal parts, the amount I ended up with resulted in 8 patties, and yes - they were good as leftovers the next day!
Mix together all of the ingredients for the avocado salsa and set aside for serving.
When you are ready to cook, heat the oil in a large fry pan to medium high. Fry the patties until they are browned on both sides and cooked through, approximately 4 minutes on each side.
I’m not a bread person so my salmon burger is perfectly happy on a bed of greens, but however you serve this, bun or no bun, you will enjoy the flavors! And another great thought if you like to plan meals in advance - this would be perfect for making extra mix, forming the salmon burgers, wrapping each individually in plastic wrap or other wrap, and place in a freezer bag. Then on the morning of a busy day, place however many you need in the refrigerator to defrost and your simple meal awaits you at the end of the day. I love these ideas!!!!!
