One Pot Chicken Dinner
I was browsing through recipe ideas when I ran across this medley for a one pot chicken dinner. It included carrots and tomatoes, which are still flourishing in my garden, and the recipe also added a few different spices which caught my eye, and my taste buds! Coconut aminos and fish sauce are part of the seasoning, causing me to have the idea that there would be a bit of an asian flare to the flavor, but those seasonings actually blended in differently than I expected and just enhanced all of the flavors in a way I can’t quite describe. So let’s talk about cut up chicken 🤓. Back in the day, I used to easily find packages of cut up chicken, what happened to those? Perhaps because of my change to purchasing organic chicken I can’t find them? But now I’ve noticed I don’t see regular chicken packaged in cut up pieces either?! Oh well, I’m just going to save a little money, buy a whole organic chicken, and cut it up myself. Well, sometimes my “do-it-yourself” ideas just aren’t worth it and this is one of those occasions. Even with a good sharp knife and knowing how to correctly cut it, this was not worth the effort. And who eats those little wing pieces anyway? Oh sorry, I know for some folks those are the favored piece, just not for me. So what will I do next time you ask? I will be buying the packages of breasts, thighs, and legs separately and ta-da, all the cutting up is done. Actually, thighs are my favorite, maybe next time will just be thighs 🧐 . . .
INGREDIENTS -
One cut up chicken, or your favorite pieces combined together, bone in, skin on 😊
4 Tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
2 cups onion, diced
3 tomatoes, diced
2 white potatoes, diced
2 cups carrot, diced
1 cup green beans
1 cup sweet pepper, diced
1 Tbsp coconut aminos
1 tsp fish sauce
4 cups chicken broth
Salt & pepper to taste
After cutting up your chicken, or opening up your packages of chicken pieces, rinse the chicken and place in a bowl. In a small dish whisk together the paprika, garlic powder, onion powder, and chili powder. Sprinkle over the chicken and toss around to coat the chicken pieces evenly.
Add 2 tablespoons of olive oil to a heavy dutch oven and bring to medium heat. Add the chicken and brown on all sides, then remove chicken from the pan and place on a paper towel on a plate.
Add remaining 2 tablespoons of oil to the pan, stir in the onion and cook for about 5 minutes. Stir in tomatoes, fish sauce, and coconut aminos, then salt and pepper to your liking (my preference is about one teaspoon each). Cook for 5 minutes then add chicken broth, carrots, sweet peppers, potatoes, and return chicken to the pot. Cover and simmer for 30 minutes.
This is perfect served on its own, or over a little rice or riced cauliflower. A sprinkling of cilantro on top is delish! Enjoy!
